Summer Couscous Salad with Corn and Raisins Recipe

This light and refreshing couscous salad is ideal for summer dinner parties. Sweet raisins and crunchy corn add texture and flavor to the fluffy couscous, while fresh herbs and tangy dressing amp up the flavor.

Ingredients

Time Needed

  • Prep Time: 15 minutes
  • Cook Time: 5 minutes
  • Total Time: 20 minutes

Instructions

  • Bring water to a boil in a medium saucepan.
  • Add couscous, salt, and pepper to taste.
  • Take off the heat, cover, and set aside for 5 minutes.
  • Transfer the couscous to a large mixing bowl and fluff with a fork.
  • In a small mixing bowl, combine the olive oil, white wine vinegar, and honey.
  • To the couscous, add raisins, corn, parsley and mint.
  • Toss the couscous mixture with the dressing to combine.
  • Refrigerate for at least 1 hour before serving.
