Instructions

  • Combine the couscous, boiling water, salt, and olive oil in a large mixing bowl.
  • Allow to stand for 10 minutes, covered.
  • Using a fork, fluff the couscous.
  • 1 tablespoon olive oil, heated in a large nonstick skillet over medium heat.
  • One at a time, crack eggs into skillet and cook until whites are set but yolks are still runny, about 2-3 minutes.
  • Season the eggs to taste with salt and pepper.
  • Top each bowl with couscous, sliced cherry tomatoes, and a sunny side egg.
  • Serve immediately garnished with chopped parsley.
